Summer's Over, Taco Tuesday Isn't
Summer may have officially come to a close, but our excuse to eat delicious tacos and drink tequila on a Tuesday is still going strong. Baja Fried Shrimp Tacos are a personal favorite so I’m sharing my recipe.
You’ll Need:
6 Flour Tortillas
2 limes
1/2 cup green shredded cabbage
1/2 cup red shredded cabbage
1/4 Panko Bredcrumbs
1/4 ounce cilantro
3 scallions
1 clove of garlic
10 ounces of fresh shrimp
olive oil
salt + pepper
Cut the lime in half, rinse the cilantro and scallions then thinly slice them. mince the garlic, rinse the shrimp then pat them dry. Season the shrimp with salt and pepper, as desired.
Heat a large nonstick pan over medium high heat. Lightly toast the tortillas and once toasted, place them in foil to keep them warm.
Add a bit more oil to the pan. Coat the shrimp in breadcrumbs and lightly fry the shrimp until golden brown and remove from the pan. Once fried, squeeze a little lime juice on the golden fried shrimp.
In a large bowl, combine the shredded cabbage (green and red), along with cilantro, scallions, garlic, salt, pepper, and lime juice. lightly stir the ingredients then place the veggie mixture in the taco shell and top with shrimp and queso blanco (if desired)!
